How to remove a symbol from an ASCII DataSet?

I searched "remove symbol" which showed nothing, but found the wiki video tutorial which shows it quite clearly.

However, with a symbol selected in a Dataset in the DataPanel, the popup option "Remove this symbol from the Dataset" is grayed out.

This is also the case for metastock data?

You can not remove a symbol from an ASCII DataSet. Either the CSV/TXT file must be physically removed and Wealth-Lab restarted, or you can use the AronowSoftware WatchList provider on your ASCII DataSet and edit its composition in the Data Manager.

For Metastock data, use any external editor that supports editing Metastock datasources (Equis Downloader perhaps can do the job) and you will probably need to restart WL as well. Or, simply use the WatchList provider.
