I want to store the following amount of static data for a symbol list:
Daily: 500 days
30 Min: 50 days
1 Min: 10 days
I created 3 new data sets called x_Daily, x_30Min, x_1Min and specified the scale for each and inserted the symbols. How do I specify the Data Range (500 days, 50 days, 10 days)?

You cannot specify a data range for static data downloads. It's proven to be a bad practice and no static provider supports this. The maximum amount of data is always downloaded for history backfill. (Speedwise you'd prefer to turn On Demand Data Update off and keep your data up to date by using Update DataSet / Update All Data.)
What you can do is choose the Data Range from the synonymous control. Check out the Wealth-Lab User Guide > Reference > Data Panel > Data Range Control
