I keep all data on my computer separate from my Windows (C:) disk on a "Data Disk". This simplifies software maintenance, backup, and a lot of other things.
Two part question:
1. how can I assign all of Wealthlab's data folder(s) to another folder, such as G:/Wealthlab?
2. if I can't do that, at least where is Wealthlab's data stored on C: (and is it only in one place)?

1. No way to assign all of Wealth-Lab's data folders. You can relocate Fidelity data though.
2. See the User Guide > Data > Where data are stored. Make sure you've enabled hidden file visibility.
P.S. Set your backup software to mirror Wealth-Lab's user data folder to G:
