Saturday, July 4, 2009 is shown as a market holiday, but the observed holiday, Friday, July 3, 2009 is not included. Is this stored as part of the Bars object of each symbol, or is it stored somewhere else? My real question is whether this is something I (or you) can fix or whether I have to do a work around?

Thanks for pointing this out. We'll have that corrected for the next release, but you can edit Markets.xml now yourself by making the change below.
